Woodcock recipes?

A slight variant of some recipes above:

Take woodcock breast, season with S&P and a little garlic salt.  Take slice of pepper jack cheese, slice of green pepper, add to breast, roll in piece of bacon and add to grill.

I have also substituted pepper for jalepnos.

One other option is to add above contents (substitute cooked bacon) to a croissant triangle (Pillsbury style).  Fold in half and bake till golden brown.  Uhm Uhm good.

i marinate the breasts for at least 4 hours & preferably 2 days in italian dressing- usually with extra crushed garlic, and grill over really hot coals till medium rare.  works well for dove breasts, too.  doc

I always do a hybrid of Brad and jkeb's recipes-marinade the breasts in italian for a couple hours, wrap in bacon with a small piece of a sweet onion, grill till bacon is crispy.  I normally eat the bacon seperate as it dilutes the flavor of the woodcock too much.
