What better to do on a 102* day than stand over a hot stove for a few hours making peach jam!

 

Picked at a local orchard. These are called "Desert Gold", small but sweet.

Blanch and remove skin.

Keep clean lids and jars in boiling water.

I use the low sugar pectin. Three cups sugar and one cup Splenda for 14 half/pints of jam.

After adding sugar and pectin, bring to boil for a minute (almost there).

Ladle into jars and seal.

Now just the cleanup left to do.

Suddenly I have a hankering for jam!  Nice job!  Seems to be one of those dying skills that needs to be preserved....pun intended (sorry).
