Sauteed dove breasts

It seems like about 99% of the time, people recommend cooking dove breast in the ol' "popper" method, but being with a dozen doves yesterday, I wanted to try something different. 

 

I breasted them out, and soaked in water for an hour while I went to the gym. I came back, patted dry, seasoned with salt and pepper, and sauteed in butter, one minute per side. Then I sliced up an onion and sauteed it in the drippings, and deglazed with a splash of red wine. Served over some mashed potatoes I had in the fridge. It was delicious, and a nice change of pace. I suspect it would work with other types of birds as well.

That looks outstanding. I'll trade some venison meatballs simmering in marinara sauce right now for some of that!
