Harvest Stew

I normally make this with Venison but, added in some Bear tonight, never disappoints.

 

2 tbl of olive oil

2 tbl of butter

2-3 lbs. cubed meat(your choice)

2 medium onions, diced

4-5 cloves Garlic

4 sprigs Thyme

1 qt. beef stock

2 packs mushrooms or your choice. 

2 tbl of cornstarch

Preheat oven to 300 degrees

In a large dutch oven add Olive Oil and Butter and cook onion until soft, about five minutes, add garlic and cook for another minute or so then add mushrooms

In a frying pan, brown meat of your choice, then add to the onion, garlic and mushrooms, add Thyme and Beef broth and bring to a boil 

place in 300 degree oven for 90 minutes

Take out of oven and place on burner and bring to a boil

make a slurry with the cornstarch and a bit of water and add to the stew in small amounts until desired thickness

ENJOY!

I forgot to add 1/3 cup of Red Currant jelly which you add just before going into the oven for 90 minutes. It gives the stew great flavor but, don't add to much or you will end up with a sweet stew instead of savory
