Oven treat

Depending on the size of the hunting party, choose either a nice saddle or  chunk of backstrap from your deer.

Prepare a paste from bone marrow, a bit of sherry , fine chopped onion, garlic, and coarse ground black pepper and coriander, Salt to taste.

Cut deep slits almost all the way through the meat about 3/4" apart (like slicing bread) and fill each cut with a good dollop of the paste.

Lay the meat in thick foil and bring the sides up in readiness to close up. Take a can or 2 depending on the size of the meat, of cream of mushroom soup and pour over the meat.

Seal up the foil and put in a preheated 180c oven for about 25 /30 min per pound.

You can garnish with fresh chopped coriander leaves just before serving. It gives colour and a neat taste.

Serve with wild rice.
