Need a Good Crawfish Gumbo Recipe

Recommended Posts

hossdog

I had a good one some one gave me a while back, and I can't seem to find it and I blabbed to someone that I had a good one and now that I can't find mine and I need a replacement.

Any good cajun style crawfish Gumbo recipes?

My wife is from Mississippi so she makes it pretty regular with shrimp. but you can just sub. crawdad tails in place of the shrimp.

2lbs Shrimp/Crawdad tails

2 bundles chopped green onion

1 reg onion chopped

2 bell peppers

1/2 bundle celery

sliced okra about 1/2" in length(I like a lot)

hand full fresh chopped parsley

1cup flour

1cup veg. oil

garlic pods to taste

tony chachere's creole seasoning to taste

cayenne pepper to taste

roux

heat oil over med. heat, add flour stir until dark brown (be careful not to scorch or burn, if you do start over)

when roux is done add vegges. and cover with water and simmer 30 min. add seasonings during this time. add shrimp/crawdad tails simmer 30 min. serve over rice

I like to add a can of crab meat to mine.
