Mike da Carpenter
Here is a recipe I started making about 7 or 8 years ago when I was trying to give up as many carbohydrates as possible but still enjoying good food. I call this one Sweetza, it’s my take on a healthy pizza. Literally anything can be used as toppings (similar to a pizza), but in the honor of trying to make a healthy pizza, we use the following ingredients. Start with basic ingredients: extra virgin olive oil Sweet potatoes chopped ham bacon crumbles/chopped up bacon tomato sauce oregano mozzarella cheese eggs
Mike da Carpenter
I like to precook the sweet potato in the microwave so it is already cooked and warm/hot when assembling. Once cooked, slice to about 1/8” thick and layer in a preheated and oiled iron skillet.
Mike da Carpenter
Put in your meat of choice. Here I’m using ham and bacon. Leave a cavity in the middle. You will see why in a couple posts.
Mike da Carpenter
Ladle on the tomato sauce. In all honesty, BBQ sauce is so much better, but paying respect to being healthy, I’m going to use plain Ol tomato sauce here.
Mike da Carpenter
Doctor up the tomato sauce as you wish to make it taste better/gooder. Here I liberally use oregano.
Mike da Carpenter
Then load up your mozzarella cheese. Remember to leave the center cavity.
Mike da Carpenter
Here is where you fill the cavity. I used to use one egg, but then it didn’t seem like enough, so I went to 3 eggs and it took forever to cook, so I have settled on two eggs.
Mike da Carpenter
Place into a 350* oven till the eggs are cooked solid (when they stop jiggling when the skillet is shaken). Check at 20, 25, 30 ... minutes. All depends on how warm your skillet was to start and how thick you have made your Sweetza as to how long till the eggs are cooked. When the eggs no longer jiggle, pull out and enjoy. Similar to a lasagna, it’s best to let it set for a few to firm up.
Mike da Carpenter
This is what happens when you let your two teenaged boys go before you. Hence the reason I now make 2 Sweetzas each time.
Mike da Carpenter
Layers up nicely and smells wonderful. This is a staple in the home for dinner time. We have it a couple times a month.
