We had a bunch of eggplant, peppers and tomatoes that we had to harvest prematurely. My wife, found a recipe for canning "Caponata Agrodulce". I can tell you that I am a big fan of it now, and had never tried it, let alone heard of it, before just today. What little Italian heritage I have, is Northern Italian, so I would not know of this since evidently it is a Sicilian dish. In fact, it is like the quintessential Sicilian dish. All I can say is that it is awesome. It is sort of a sweet and sour ratatouille. 12 pints for the root cellar, and a healthy dose to eat in the fridge...livin' large....
