Traditional Thanksgiving dinner at my daughters place in NH. Just us and my two daughters and SIL. Daughters will get the turkey stuffed and in oven and a I’ll take over when we arrive. Lots of sides, many weird ones too since my SIL is a strict vegetarian. Store bought bird. I only kept one wild turkey Tom from this fall whole and plucked and that’s destined for brine and smoke later sometime. Link to post Share on other sites

And oyster casserole, cornbread dressing, green-bean casserole with the little brown onion things on top, Cranberry-apple casserole. And a store bought pecan pie. We're invited over to my buddy's ranch. They're setting tables outside for six or seven of us. Don't even know if we'll go. If not, we have a turkey breast in the freezer. We'll see. Too many young ones in contact with too many other young ones. We're going to do a brisket, a couple sides and a couple pies and make deliveries to folks. For ourselves, we bought a smallish turkey breast that I'll roast and do some mashed potatoes, cornbread stuffing and corn casserole. The traditional stuff that's largely a nod to parents and grandparents that are no longer with us. Link to post Share on other sites

Last weekend I found over two pounds of chants; a pound of them per pie and wild turkey from this past spring. Amazing year for chants; found them from early June through mid November. Below is a pound of chants which I cooked first in butter and saved juice to whisk into roux with a broth I made from herbs, onions, leeks, celery and turkey. I made two pies; one for Floyd who won't be seeing his children this Thanksgiving and one for my household. We won't be seeing ours, either. Probably also make scalloped oysters. Here is the pie stuffing: parsnips, Vidalia onion, carrots, turkey and one pound of rough cut chanterelles stirred into a roux. I made more than enough to stuff pies and had the surplus for lunch Friday and Wednesday when I made each pie. Pie is in the freezer for next Thursday. Gil Link to post Share on other sites

Got a wild turkey poult, plucked, and it will be roasted with dressing (the bread kind, didn't know there was a difference). Mashed potatoes, green bean (from the garden) casserole, roles (or maybe it's buns...is there a difference there too? 🙂 ), and apple pie for dessert. Traditional, yes. Boring, maybe. But although we eat a lot of wild turkey throughout the year, the T-day dinner is once a year and I like it. Link to post Share on other sites
