Grouse tails

I’ve always opened my tail and nailed them to a board. Then I cover the meat with salt and let them sit. I’ve never really had any problems but thought I’d see how you all do it.

I usually open the tail fanned out and hold it in place on a piece of cardboard with straight pins then use Borax instead of salt to cover the meat area and let it sit for about two weeks to let the tail dry out. Borax is better than salt because it dries out the meat area where salt will accululate moisture.
