Dove Sliders

Very hot coals required.  Cut rolls in half and toast on hot grill, it only takes a few seconds.

Place iron skillet on the grill.  Saute chopped jalapeno, nopalitos, and onion in their own juices, stirring around on the entire skillet, then add a gob of butter and stir around covering the whole skillet.  Place dove filets on the skillet, quickly turn each one, and begin removing while still rare.  

Spread a scoop of jalapeno flavored cream cheese on a toasted roll, add a dove filet, and cover with the other toasted half.  

Place steaks on the skillet to cook while eating the dove Sliders.

So, for a nice dessert after grilled dove filets and steak, is watermelon that was picked in the field about 2 or 3 hours earlier, still cool from the night.  Don't worry we didn't rob the melon patch, we had permission.
